Once upon a time I had a post drafted about these absolutely addicting berry pie bars from Joy the Baker that took over my mom’s kitchen last summer. She made them nearly weekly, and we couldn’t get enough. We were heading into the 4th of July weekend so I planned on finishing the post the following week. And then, completely unexpectedly, I got engaged….
If you’ve planned your own wedding you’ll know that it can completely take over your life. The blog post fell on the back-burner as I immediately began spending all my energy into managing every last detail. I made spreadsheets on spreadsheets and went to Michael’s weekly to pick up DIY items on sale. I spent a ridiculous amount of time stressing about what my hair was going to look like and teaching myself how to do my own makeup. There was no “Say Yes to the Dress” moment, I had major dress confusion and ended up buying two, only to later sell one online. The big day has come and gone in the crazy whirlwind that everyone tells you it will, and it was just as epicly fun as I could have hoped for.
Here we are 1 year and a few months later! I’m a little more than 1 month married, post honeymoon (in Napa…. tell you all the details later!), and finally have some mental energy to get my life back on track. Which includes… blogging!
So, belatedly, but well worth the wait, are what I now call Engagement Pie Bars. Find the recipe here on Joy’s blog. I wish I could share just how scrumptious these bars look but, as life tends to happen, all my original photos were lost when my computer hard drive died recently. We may be heading into fall, but these are easily made with frozen berries, and freeze wonderfully for a mid-winter pick-me-up when you just can’t take the gloom any longer.
