I think my adjustment to the new job/new state/new living situation/new life is coming to a close. Which means I can finally focus on blogging again! I still haven’t gotten my workout schedule on track, but I have managed to figure out how to take public transportation into the city, re-learn how to make my own lunch (it’s been years), and settled in at the new job.
I mentioned in one of my last posts about my kitchen situation at home.. or the lack of kitchen situation. My luck in acquiring free housing (boyfriend’s job perk) of course has its trade offs, meaning that I have a two room studio/dorm with no kitchen or private bathroom and 3 hours + of commuting each day. I temporarily gave up blogging partly because of the stress that comes with thinking of how to cook dinner for two on a hot plate. Or how to maintain a healthy diet when I only have space for two mini fridges (and only when they’re stacked on top of one another.) . Of course, I hear a lot of “but you’re so lucky because it’s free”, which is true. It certainly helped me start increasing my student loan payments and make my first big adult purchase: my own car. But I can’t tell you what I would do to have my own bathroom and a full size fridge. My Bellevue apartment sounds like a palace now (not to mention it was just a really good apartment. Probably the biggest thing I miss from my move.)
I have a “Kitchenless Cooking” Pinterest board where I can save recipe ideas that don’t require an oven, or multiple burners, or a lot of space. I was just looking at it when I thought, you know what? I’m gonna try to blog about that. It’s like Smitten Kitchen… only the smitten kitchen-less kitchen. Ha. See below for visual evidence.
It’s not too bad right? It’s a decent trade-off to be able to see this view every day.
I’ve already made a few discoveries, like the magic that is a crockpot. It is by far the best gift I’ve received, from my Grandma a few years ago. Did you know you could make meatloaf in a crockpot? Plus my mom sent me a recipe for microwave apple crisp which sounds delicious. So even with a lack of a kitchen I have no excuse to stop blogging! I’m talking myself into this, and now it’s in writing! Stay tuned. I’ve also been doing a lot of research on the best places to get lunch near work under $10 which may make a blog appearance.
